Kaju

Our story begins in the mineral-rich groves of India’s southern coast—a region where cashew cultivation is a generational craft. While cashew has become a global commodity, the true geographical gold remains rooted in the traditional processing hubs of Kerala.

About

Kaju

In these coastal groves, the journey of a Kaju kernel is defined by patience. We rely on a signature texture and snap achieved through a unique combination of local humidity and meticulous, time-honored drying methods that have been perfected over decades.

Kaju was founded to bring this authentic standard to the region. We recognized that while the UAE values the world’s finest imports, the market was missing the specific integrity of the premium Indian cashew. Most commercial options rely on high-speed industrial cycles and oil-heavy roasting that mask the nut’s natural profile.

We chose a different path. By partnering directly with artisan processors who prioritize hand-sorting and dry-roasting, we ensure the kernel remains uncompromised. We bypass the mass market to preserve the natural buttery sweetness and ivory purity that only this specific Indian origin can provide.

Kaju is the result of that search—a brand dedicated to delivering a standard of cashew that is rare to find in the region: hand-picked, expertly processed, and presented with the quality that a staple ingredient deserves.

Kaju Production Process

Our Process: Heritage Meets Precision

At Kaju, we believe premium quality isn't just about where the nut comes from, but how it is handled every step of the way. We bridge the gap between mass production and the meticulous care of generations past.

Our cashews originate in the coastal groves of Kerala, where the climate and generational expertise define the quality of the harvest. From there, we employ a rigorous refinement process that balances advanced technology with human touch.

Safety First: Validated Pasteurization

We prioritize food safety without compromising flavor. We utilize a validated pasteurization process using steam and hot air—a method pioneered in Asia for microbiological safety. This ensures that every Kaju cashew is clean and safe while retaining its natural integrity.

The Digital Eye: Advanced Sorting

To guarantee consistency, our cashews undergo advanced image processing. We use multispectral cameras alongside X-ray machines and metal detectors to identify and remove foreign materials or imperfect kernels. This technology ensures that only the finest nuts make it to the next stage.

The Human Touch: Hand-Selected

Technology can detect flaws, but only a human eye can ensure perfection. A dedicated team of well-trained women performs the final sorting and inspection of our cashews. This commitment to hand-sorting allows us to provide a premium alternative to the industry standard, ensuring you receive only the best in every pack.

Preparation: Conscious & Clean

How we finish the nut depends on the variety:

  • Natural & Jumbo: These remain untouched by heat to highlight their natural sweetness and texture.
  • Roasted & Seasoned: For our Lightly Salted, Salt & Pepper, and Chili & Garlic varieties, we use a dry-roasting process. We avoid heavy oils, relying instead on a firm snap and high-quality ingredients like sea salt, cracked pepper, and toasted garlic.

Packaging: Conscious by Design

We believe that premium quality extends beyond the nut to how it enters your home. Our packaging is sustainable, utilizing a mix of recycled paper, metal, and cardboard to minimize our environmental footprint.

Sustainable packaging:

Our commitment to quality extends to the way our products are preserved. We utilize sustainable packaging constructed from recycled paper, metal, and cardboard, specifically selected to minimize our environmental footprint. By choosing these durable, responsibly sourced materials, we ensure our packaging reflects our standard of intentionality and environmental care.

Storage and Care:

To maintain the integrity of your cashews, store your container in a cool, dry place away from direct sunlight and heat. For long-term freshness beyond one month, we recommend refrigeration; simply ensure the lid is fastened securely to protect the kernels from external aromas.

If the cashews are exposed to humidity and lose their crispness, they can be easily restored. A few minutes in a low-heat oven will remove any moisture and return the kernels to their original dry-roasted state.
